A wonderfully tart and refreshing cordial. It uses the tartaric acid as the preservative and with all the citrus will keep in the fridge for yonks. Its great with bitters and gin.

Ingredients

4 limes juiced and zested
3 lemons juiced and zested
2 cups castor sugar
25 grams of tartaric acid

Method

Mix all ingredients in a saucepan and bring to the boil. Simmer for 5 minutes and then move from the heat.

Allow to cool then bottle. Store in the fridge.
