Soba Noodle Salad

100 grams soba noodles
1/16th cup rice vinegar
1 tablespoon soy sauce
1 teaspoon sesame oil
1 teaspoon wasabi
1/8th cup minced green onions
1 small tin of 99% fat free tuna

Method

Bring 3 litres of water to the boil and add the noodles.  Cook until tender to the bite.
Drain and rinse thoroughly under cold running water until cool.

In a large bowl mix the vinegar, soysauce, sesame oil and wasabi.  

Pour about half the dressing into a small bowl and reserve.  Add noodle to the large bowl and mix to coat.
Cover and chill until cold.  About 1 hour or up to 4 hours.

Just before serving, add the remaining dressing, spring onions and the tuna.
