This is from the Australian Womans Weekly Fresh TV show Ingredients 125g unsalted butter 220g castor sugar 2 eggs, lightly beaten 25g cocoa powder 1 teaspoon vanilla essence 40g plain flour, sifted ¼ teaspoon salt 200g good quality cooking chocolate, coarsely chopped ½ cup pistachio nuts Method Preheat the oven to 180°C and lightly grease and line a 23cm square cake tin.
Melt the butter in a saucepan over low heat. Remove the pan from the heat and stir in the sugar, eggs, cocoa and vanilla.
Stir in the flour and salt and add the chocolate. Pour the batter into the prepared tin, scatter with nuts and bake for 30 minutes
(Don't over cook - the brownies should be moist). Allow to cool completely in the tin. Turn out and cut into squares.
