This is a greaet dish that pay dividends when cooked in bulk and frozen for later use. I serve it with a plain yogurt mixed with finely chiffonaded mint. Ingredients (makes 10) 900 grams minced lamb 1/2 cup of minced green onions 4 garlic cloves, minced 3 tablespoons of pistacios or mixed nuts 4 teaspoons dried mint 4 teaspoons tumeric 1 teaspoon ground allspice salt 1 pinch cayenne 1 egg, lightly beaten 1 handful breadcumbs flour for dusting Method Mix all the ingredients together, adding the bread crumbs last. The idea is to bind the meat without making it too stodgy. Shape into small patties and dust in the flour. Fry until cooked and reserved. Goes really well with wholemeal buns and Cumin Scented Chips.
