Onion Jam
Sometimes the food is all about the condiment. In this case, the condiment is the star!! I like to add some white pepper and some chili powder and some thai sweet chilli paste.
This keeps in the fridge for a few months (apparently.) It goes great with sandwiches,cheese, crackers, pates and even scrambled eggs. But it is best with steak and chips.
Ingredients
700 grams white or red onions
50 grams butter
50 grams oil
130 grams sugar
1 1/2 teaspoons salt
1 1/2 teaspoons pepper, freshly ground
7 tablespoons sherry vinegar (or substitue balsamic)
250 mls red wine
2 tablespoons brandy
Method
Peel and slice the onions thinly. Melt the butter with the oil in a saucepan. When hot, add in the onion, sugar, salt and pepper and stir well.
Cover the saucepan and cook 30 minutes over a gentle heat, stirring from time to time with a wooden spatula.
Add the vinegar, red wine and brandy. Cook for a further 30 minutes uncovered, stirring regularly. Dont let it reduce too much.
This makes about 2 cups.
